Christmas Cookies Recipe
Prep Time: 25 minutes
Cook Time: 10 minutes
Makes: 40 cookies
Ingredients
For the Cookies:
- 225g (1 cup) unsalted butter, softened (or use salted, and skip the salt)
- 1 cup caster/superfine sugar (granulated sugar works too)
- 1 ½ tsp vanilla extract
- 1 large egg (55–60g)
- 3 cups plain/all-purpose flour
- ¾ tsp baking powder
- ¾ tsp salt
For Decorating:
- Colorful icing (see recipe for icing below)
- Melted chocolate for dipping (optional)
- Icing sugar for dusting (optional)
- Silver balls or sprinkles (optional)
Instructions
- Preheat the Oven: Preheat to 180°C (350°F) or 160°C (fan-forced). Line two baking sheets with parchment paper.
- Make the Dough:
- Beat butter and sugar in a large bowl until creamy (about 1 minute on medium speed).
- Add the egg and vanilla, then beat until fully combined.
- Add the flour, baking powder, and salt. Start mixing on low speed, then increase to medium until the flour is fully incorporated. The dough will appear clumpy.
- Prepare the Dough for Cutting:
- Dust your work surface with flour and scrape the dough out of the bowl. Pat it together, then divide it into two discs.
- Roll each disc to your desired thickness: 0.3cm (⅛ inch) for thinner, crispier cookies, or 0.6cm (¼ inch) for thicker, softer cookies.
- Cut Out Shapes:
- Use cookie cutters to press out festive shapes.
- Use a knife or spatula to carefully transfer the shapes onto the prepared baking sheets.
- Bake:
- Bake for 10 minutes, swapping trays halfway through for even baking. The cookies are ready when the edges are just starting to turn light golden.
- Allow the cookies to cool completely on the trays.
- Decorate:
- Ice the cookies with colorful frosting or dip them in melted chocolate. You can also dust them with icing sugar or leave them plain—they’re delicious either way!
Pro Tips
- Storage: Store cookies in an airtight container for up to one week. While they’ll still taste great afterward, they’re best enjoyed fresh.
- Batch Baking: This recipe makes a big batch of cookies, perfect for sharing with friends, family, or even Santa!
